Luzhi was historically known as “Fuli.” According to legend, the Tang‑dynasty poet Lu Guimeng once lived in seclusion in the town; since he was called “Master Fuli,” the place came to bear that name. The famed Fuli hoof dish likewise derives its name from this story and is sometimes referred to as “Guimeng Hoof.”
Like Fuli Duck, Fuli Pork Trotters also originated at Lu Guimeng’s banquets. Legend has it that whenever a close friend came to visit, these two dishes were always indispensable on his table. Fuli Pork Trotters boast an enticing color and a rich, mellow flavor—sweet yet not cloying. Today, you can find traces of Fuli Pork Trotters on the dining tables of local residents everywhere.
Generally speaking, Su cuisine is meant to be refined and elegant, with flavors as understated and light as the tranquil waterways of the Jiangnan region. Yet this celebrated dish is quite the opposite: vividly colored, richly flavored, and boldly seasoned. A hefty pork trotter is first marinated in soy sauce, then simmered with an array of spices—such as star anise, rice wine, and brown sugar—resulting in a deeply robust taste. Thanks to the marinade, the meat melts in your mouth, tender and succulent; and the brown sugar, unlike white sugar, offers a sweet yet not cloying finish that lingers delightfully on the palate.
