Begonia Cake

Haitang Cake was first created during the Qing Dynasty. It derives its name from its resemblance to a begonia flower and has since become one of the signature snacks of the Jiangnan region. To make it, flour and yeast are mixed with cold water to form a batter. A thin layer of oil‑water mixture is brushed into a specially crafted mold, then the batter is poured in. Fillings such as red bean paste, fresh pork, or lard are added, followed by another coat of batter. The cake is garnished with diced candied lard, colorful shredded candied melon rind, sesame seeds, and other toppings, then pressed onto a hot iron griddle sprinkled with white sugar and baked over a coal stove until cooked through. The result is sweet and delicious, especially when enjoyed warm.
