Luzhi Pumpkin Cake is the most distinctive of Luzhi’s local specialties, a delicacy seldom found in other Jiangnan water towns. Whether entirely golden or speckled with yellow and white, it boasts an enticing color and a sweet yet not cloying flavor. Pumpkins are rich in polysaccharides, amino acids, bioactive proteins, carotenoids, and a variety of trace elements. To make Luzhi Pumpkin Cake, one selects high‑quality local pumpkins, washes them, peels them, slices them, and cooks them until tender. The cooked pumpkin is then mixed into glutinous rice flour, shaped into small cakes, and steamed in a special wooden bucket for about fifteen minutes. Finally, a few red dates and strips of colorful candied fruit are arranged on top.
